This is a feature that iPhones that that will switch phone to cellular when WiFi connection is weak. When this happens - the phone may appear to drop from your home network.
Like with WiFi assist, if network WiFi is weak, a phone may try to join another network in the area.
When a phone has low battery, is in low power mode, and is not actively charging, network connection may drop periodically while phone is not in use to conserve battery life.
Certain apps may be able to control WiFi connections and can affect behavior of a phone on network, especially when phone is idle, or during night time.
Most ISPs will push updates to your modem or router every once in a while. Generally these will happen when network demand is at its lowest late at night. When this happens, your internet may temporarily go down completely.
